Poor Mans Blintz

Some of Laurie’s favorite dishes are the simplest to make. When pressed for a quick dinner that will satisfy even her growing son, she turns to recipes that are both easy and delicious. Here, she shares her take on a classic blintz — comforting, timeless, and simply satisfying.
Serves 1
INGREDIENTS:
1 jumbo or two large eggs
1 teaspoon butter or neutral oil
Salt to taste
⅓ cup cottage cheese
1 tablespoon maple syrup, jam, or jelly
METHOD:
Crack the egg(s) in a small bowl and whisk well with a fork, so that the yolk and whites are combined and homogenous. Season the egg with a pinch of salt.
Heat a skillet over medium-low heat and add the butter or oil. If using butter, let it foam and subside. If using oil, let it warm for about 30 to 45 seconds. Pour the egg into the pan, and let it spread out. Let it cook until it is firm on the bottom and easily flippable, about 45 seconds to a minute, then flip it to cook on the other side, about 30 seconds. Remove the egg from the pan and transfer to a plate. Top with cottage cheese, drizzle over the syrup or jelly/jam, season with more salt if desired, and serve/eat.
